Easy Carrot Cake (Gluten Free)
Easy Carrot Cake by Trina Parker owner of Lola & Bean, New Zeland
A big ½ cup of Canola or RiceBran oil
1 ½ cup of Raw Sugar
Beat 3 eggs lightly with ¾ tsp vanilla essence and add to the Sugar and Oil mixture
In a large bowl combine 1 ½ cup Gluten Free Baking Mix, 1 tsp cinnamon & ¾ tsp of salt & 3 cups of grated carrot.
Add raisins, chopped walnuts, sunflower seeds and pumpkin seeds if desired
Mix all together and lastly sift in 1 ½ tsp of baking soda
Grease cake tin - bake 65-70 mins at 160 degrees celcius, ready when skewer comes out clean
Cream Cheese Icing
350gm Cream Cheese
2Tblspn Lemon Juice
50g Icing Sugar
Beat together until smooth ice cake when cold. Normal lemon icing is just as nice for a dairy free option.
NB: Check the cinnamon, sometimes spices can contain wheat, and also check your baking soda.
(it works just as well with normal flour by replacing equal quantities of the gluten free mix with wholemeal flour.)
